Ruqaq - is a thin dough made from wheat flour. Ruquq can be cooked soft, but also dried fully and sold crunchy. Ruqaq is used in recipes, like a local filo pastry. It can be used for rolls, but traditionally it is used to layer meat or vegetable dishes.
