Aspargus is one of the most popular canned vegetables. They are harvested at night, to shield them from the sun and preserve their quality as much as possible, since they have a very high water content (over 90%). They are preserved as naturally as possible in a can or glass jar, with a little water, salt, and a few drops of citrus.
