The caper bush is native to Asia. It has woody branches and showy white flowers, and can grow to a height of 3 feet. It is widely grown and used in gastronomy throughout the Mediterranean. The plant bears both capers (unopened flower buds) and also caper berries (the fruit).

The unopened flowers from the caper bush can be picked and then conserved in vinegar (capers), the fruit can also be pickled in vinegar (caper berries), the leaves and young shoots are used in cold and warm dishes, and the plant’s bark and roots are also used in medicinal preparations.

Capers and caper berries are used in cooking to season dishes.
