Dried whole okra will be powdered and added to qurtum soup.

Qurtum is a dish made with the safflower plant. After the petals are harvested and sold for making lemoon measfar, safflower plants are sold locally in Esna to make a dish called qurtum. The qurtum dish is a traditional dish from Esna, and is made with a meat stock, and women also add dried okra (bamia) to thicken the soup.

These materials were developed by the “Rediscovering Esna’s Cultural Heritage Assets” (RECHA) Project. The RECHA Project has given us permission to use the materials and distribute any modifications under a similar license.”
