Ewa is the Yoruba name for beans and Agoyin is the name of the area where the dish originated from. Ewa Agoyin is an indigenous yoruba meal, a combination of beans and burnt sienna pepper sauce. An authentic Ewa Agoyin sauce requires using a lot of palm oil, and bleaching it before using it to fry the pepers. The peppers used for Ewa Agonyin sauce are dried bell peppers, cameroon peppers and dried pepper seeds, which are dried seeds of red chilli peppers. The beans are made to be really soft and then it is mashed.
