ElBulli restaurant adopted a weekly practice for which Ferran tasted the menu he proposed to his clients, sitting at a table, just as they would. Result of the capacity of analysis and self-criticism, this habit of perfectionist will allowed a constant improvement of the whole of the menu and the elaborations at the individual level.
