Preparation: 20 minutes Finishing: 10 minutes
Ingredients: 50g geoduck clams, 15g fresh green Sichuan peppercorn, 15ml soybean paste, 15ml Sichuan pepper oil
Method:
1. Remove flesh from clams and fillet, blanch with hot water then plunge in ice water to let cool.
2. Marinade clam fillets with Maggi sauce and soybean paste for 3 minutes.
3. Remove marinade and pat dry fillets. Finish with Sichuan pepper oil.
