The eels that are served at Etxebarri mainly come from the Basque coast. The chef Bittor Arginzoniz installed his own fish hatchery to ensure a supply of them all year round. He cooks them on the grill, in a mesh pan, which ensures that they retain their smooth texture and their flavor of the sea.
