In early Spring, the vine’s resting period comes to an end making way for its vegetative cycle that varies according to the location. Shoots and leaves appear between April and May, followed by the flowers, very sensitive to frost. Flowering and ripening of the grapes last until August. While growing, these berries change in size and chemical composition. At first, their colour is green, but then at a final stage it changes to a golden or reddish colour. It is also in this stage that the acidity of grapes settles in and they become more susceptible to diseases such as downy mildew (INFOVINI, 2009; PATO, 1982).
