Harvesting can take place between August, September and October, depending on the desired characteristics and the intended type of wine. After harvesting the grapes, the remaining leaves fall to the ground as the temperature begins to drop and the Autumn frost sets in. The vine enters its resting period, which extends from November to March/April, and resumes its activity in early Spring. The cycle begins once more (INFOVINI, 2009; PATO, 1982).
