This sashimi dish contains sweet shrimp (ama ebi), flounder, and whelk which has a lovely firm texture. In Niigata, sweet shrimp is called Nanban (red pepper) shrimp due to its color and shape. This variety of shrimp is unique in that it is vividly red from the start, not just after being cooked like many other varieties.
