Moimoi is a staple food among the Yorubas (and other regions of Nigeria). It is steamed bean pudding made from peeled black-eyed peas, onions, fresh ground peppers and if desired, any protein of choice including boiled eggs, sausage, corned beef etc.The ingredients are blended (excluding the protein) and then portioned into 'Ewe'ran' leaves. Each leave is folded into a cone, the mixture is poured into it and then carefully folded and placed into a pot for steaming. More leaves are used to cover the top of the pot before steaming.
