Irun, Spain

Wooden table supported on four legs. A mechanism sits on top with two wooden rollers on serrated iron wheels at one end; the rollers are turned by an iron lever with a wooden handle.

The device was formerly used in the bread-making process to mix the ingredients in the dough (flour, yeast and water) and make the final product stronger.

This one comes from Biarritz (Labort) and belongs to the collection acquired by the Provincial Government of Gipuzkoa from Goruzaleok, a group working to preserve Basque fabric-related heritage.
