The invoice of the MECCANICA LOMBARDA company concerns the purchase of the knife malaxer at the Meccanica Lombarda factory in 1909. The knife malaxer was used to definitively prepare the dough making it more homogeneous, even more amalgamated, elastic and therefore such as not to break when it went into the press. The machine worked the dough with a series of foils, improperly called knives to obtain a result far better than in the past when two workers repeatedly beat the dough placed on a plank with a long flexible and hinged shaft on which they sat to operate it with your own body weight.
