"Paso Doble" Tomatoes

If there is a fruit so consumed as punished, it is the tomato. For this reason, the Almería-born Francisco Sánchez has devoted himself to finding that explosive flavor, that fine skin, that meatiness and that balance between sweetness and acidity that characterize the best tomatoes. He began rehearsing with up to 24 varieties until he found the holy grail tomato: the mountain of Gaul.
