Hydraulic press

Once the olive paste is beaten, it is poured on each of the large mats called "capachos" (or "capachetas"), alternating olive paste, capacho, etc. introducing rigid flat discs at certain heights to balance the pile and improve pressure. The press, contrary to what it seems, goes up crushing the capes and the paste. Between the straws will be the olive pomace (wet paste) and what falls, is a mixture of oil and watery part of the olive that is collected in amphoras where it is left to rest.
