‘Castile and León’ is an autonomous community made up of 9 provinces, and though they each have their own gastronomical specialties, they also have some specific cuisine in common. Two examples would be hearty stews and roasts—typical food enjoyed throughout the whole community.

The region boasts a wide, rich variety of wild mushrooms, which combined with the quality and expertise of the local producers, guides, and chefs, has led to its status as one of the leading communities in the field of mycotourism.
