Scallops are bivalve mollusks, related to clams and oysters. They live all year round in deep, cold water, and are widely found in Galicia. They are traditionally harvested by trawlers, using lines and nets, but also often harvested by hand. They are a highly valued ingredient thanks to their meatiness and flavor.
