Steamed and Grilled Beef Ribs
Steamed beef ribs were special dishes reserved for holidays, ancestral rites, or guests. In ONJIUM’s recipe, the ribs are steamed with raw shitake
and grilled again to create a rich, smooth palette.
1 Cut the ribs into 10cm pieces. Remove the fat, and separate out the meat. Roughly mince the meat.
2 Mince and stir-fry the onions. Peel and mince the chestnuts. Also mince the pears.
3 Thinly slice, lightly salt, and stir-fry the raw shitake mushrooms.
4 Hand mix the minced beef with the above ingredients and seasoning.
5 Thinly slice the jujube, which will be later used for decoration.
6 Separate the yolks from the egg whites, griddle them as thin film-like sheets respectively, and then slice into thin noodle-like form.
7 Powder the bones with starch, lay the seasoned beef and jujube on top, and steam.
8 Lightly grill the surface of the steamed beef on a salamander or grill.
9 Lay sliced fried egg over the finished dish.
