Most Nigerian staple foods are eaten with tomato stew sauce. This includes rice, amala, eba, beans, fried plantain, yam etc. Ingredients for preparation include tomatoes, scotch bonnet pepper, onions, salt, stock cubes, thyme, curry, oil, and other seasonings and protein of choice. To prepare, boil the protein (chicken, beef, fish) with seasonings and onions. In a seperate pot, heat some oil and add chopped onions. Add already ground tomato, pepper and onions. When it is well fried, add the boiled protein. Add broth to lighten the stew (if it is too thick), and cover the pot to simmer on low heat for a few minutes.
