The Centenary Project

The Centenary Project
Lagos, Nigeria

Yellow Eba is produced using grated cassava (manioc) flour, commonly called garri, fried in palm oil. To prepare eba, all you need is the flour and hot water, a cooking pot or bow, and a spatula. Boil water and pour into a bowl, sprinkle the portioned garri into the boiled water. Pour out excess water and knead with a spatula. If the eba is too soft, add more garri, if it is too hard, add more water.
