Lagos, Nigeria

Kokoro is one of Nigeria's most enjoyed local snacks. It is hard and crunchy and has a rod-like shape. Kokoro is a popular Nigerian snack that is made from corn flour and is sold in the market. It has a sweet, ginger-like taste. Kokoro is made from cornmeal chaff (after the starch has been removed to be made into pap), cooked and rolled into pencil-thin, slightly curvy sticks. It is hard and crunchy. Sometimes, it is very long – almost 12 inches in length.
