Unlike the lemon, Citrus limon, which is used mainly for its juice, the Buddha's hand citron contains very little flesh and juice. However, its rind and pith have been used in cooking since Roman times. This unusual looking fruit is a particularly popular religious offering in Buddhist temples in China, symbolising happiness and a long life.
