As a boy Ángel was lucky enough to grow up eating free-range eggs from hens reared by his grandmother in the countryside. When he was a bit older, that same boy got out of bed one day and decided that he wanted to pay tribute to that wonderful woman and, while he was at it, show the people of Madrid what a “real egg” tastes like. In 2015, Ángel opened his own small farm in Baterna (Ávila), where the chickens of Egg0 could eat grain, listen to music by Beethoven, and cluck to their hearts’ content in over 3,200 square feet of land. That hen paradise produces eggs for Egg0—sold only super-fresh by Ángel (no more than 3 days after being laid).

A feature of Madrid’s Chamberí neighborhood since 1933, the Vallehermoso Market’s raison d’etre is the same as when it first opened its doors to the public: selling quality products. However, today it does so under a new business model in which customers can not only shop there, but also go out for tapas, lunch, or dinner at one of its many catering outlets.
