Sopa de Ajo (Garlic Soup) is a traditional soup in Castile and León, which basically consists of water or stock, bread (usually leftover, stale bread), sweet peppers, bay leaf, garlic, olive oil, and poached egg. It is a soup with humble origins, and like any popular dish, it has many variants. Depending on the family’s finances and the cook’s tastes, it is common for other ingredients to be added.
