In Turkey, for the production of confectionery which started in the 16th century, honey and molasses were used as a sweetener and flour was used as water binder and texturing element. In the early 19th century, with the arrival of the sugar produced in refineries established in Europe, in those days named "Head sugar", to Turkey, famous Şekerci Haci Bekir started to produce a hard candy called “akide” with different flavors and colors by dissolving and beating this sugar in mortars and adding rose, cinnamon, mastic, orange and lemon.

Was this large sugar jar also used in the shop of one of our well-known big candy companies? That is possible since it is a shop type rather than a home type jar. It is the kind to take kilos of hard candy in its chamber.
