"Ika-jimaki" is popular in the Iwamuro area of Niigata City and is made by filling fresh squid with glutinous rice and cooking it in a soy sauce-based broth. In other parts of Japan, this type of dish is known as "ikameshi" ("squid rice") but locals gave it a different name because they thought it resembled another local dish called "chimaki" which is glutinous rice that is wrapped in bamboo leaves and boiled.
