Khasi-inspired Krai, Mushroom, and Piscot Soup that uses finger-millet or ragi, assorted mushrooms, and chayote. This dish was conceived by Chef Thomas Zacharias at the LocavoreMeetup in Shillong with NESFAS.
Chef Thomas says: "What we love about this recipe is that it is really simple, and can be made with ingredients that are accessible in most parts of the country. Ragi or finger millet is widely used in traditional dishes across India, but this particular recipe highlights how it can be used to give body to a soup.
