The chef Eneko Atxa explains "the British pirates entered by the coast of Bakio, they assaulted this locality and those of around, and they took all the lemons to fight the scurvy during the rest of the trip. For this reason, among others, the Bakio lemon is a product that was about to disappear".
In their eagerness to recover it and honor it, in Azurmendi they have devised the 'lemon grass': in a drained lemon a homemade foie gras made with local birds is introduced, and covered with a veil of lemon grass. The plate is decorated with different flowers from the restaurant's garden.
