Outside the capital, the Community of Madrid offers a rich local gastronomy. In towns such as Chinchón, Rascafría or Buitrago del Lozoya, you can taste traditional dishes such as roasts, migas, Castilian soups and homemade sausages. Many municipalities hold gastronomic days and markets where local produce is the protagonist.
