Mugikiri is a regional cuisine many citizens of Tsuruoka are familiar with. It can be enjoyed all year round and is best enjoyed chilled dipped in sauce and slurped. The name mugikiri originates from the way it was made, by cutting the kneaded and rolled out dough.
