Since the beginning, with the opening of Refettorio Ambrosiano in 2015, one of Food for Soul’s main missions has been to use food as a tool to engage the community. In order to recover surplus ingredients and shine light on their potential to become nourishing and nutritious meals, we have been working with local and international chefs who have volunteered their skills and vision to help us demonstrate that a more sustainable and inclusive food system is possible. Pictured is a shredded potato nest with a poached egg cooked by chef Mauro Colagreco during one of the first services at Refettorio Ambrosiano. The children who had come to eat at the Refettorio were initially afraid to ruin it, but when they discovered that by poking the egg the whole plate would turn red from the yolk, they loved it and suddenly the room was filled with laughter.
