Lagos, Nigeria

Although considerable variation of preparing pounded yam now exists, Mortar and Pestle are implements traditionally used to prepare pounded yam. They are still commonly used in pounded yam preparation accross Nigeria. The yam used for the preparation of pounded yam are not newly harvested yams. The yams must have stayed on the surface for weeks or months. To prepare pounded yam, you will need Tubers of Yam, Kitchen Knife, Fork, Mortar, Pestle, Cooking Pot, and Water. Start by peeling the yam and chopping into chunks. Wash them and transfer into a pot of water. Cook for fifteen minutes then check to see if the yams are soft enough for pounding. If they are, pick with a fork and gradually transfer into the mortar and pound with the pestle. Sometimes the yam gets very strong while pounding, so you will need to add little water and pound till it is seedless and soft enough to mold.
