Salted bonito has a special place especially on Istanbul’s meze tables. The fish is salt-cured, which is
considered the best method of preserving fish. Selecting, cutting, cleaning and pickling the fish is a
process that requires a great of time and effort. Lakerda should be served accompanied by thinly sliced
raw red onions. Another common side dish is arugula/rocket leaves.
