Ingredients: 500g pork short ribs, 300g chicken stock, 10ml dark soy sauce, 30g sugar, 50ml rice vinegar, 5g preserved plums, 2g star anise, 5ml vegetable oil, 2g salt,
Method:
1. Chop ribs to bite sizes, blanch with hot water and set aside.
2. Caramelize sugar in pan with oil then add in ribs to stir-fry and color.
3. Add in preserved plums, soy sauce, vinegar, salt, and anise to cook and reduce for 30 minutes.
