"Katsu-don" is usually a bowl of rice topped with pork cutlets cooked with egg in a sweet and salty broth. Niigata "tare katsu-don" is unique as the thin cutlets are quickly dipped into "tare" (a rich sweet-and-salty sauce) before being placed on top of a bowl of rice.
