The nuns of the order of Saint Clare (also known as the Poor Clares) fund themselves and the monastery of Belorado (Burgos) by selling high-quality truffles and chocolates in gourmet stores and Michelin-starred restaurants. Paco Torreblanca, the renowned Spanish pastry chef, is their advisor.
