相传,清朝康熙皇帝特别偏爱食用八宝豆腐,因它是用八种不同的优质原料制成,故被康熙赐名为“八宝豆腐”,并将其列作他最喜爱的御膳和宫廷宝菜之一,而且他还命宫中文人将“八宝豆腐”的用料及制法写成御方,将其作为金银财宝一样重要的礼物,赐与江苏巡抚宋牧仲等宠臣。后来,他又将此方赐给尚书徐乾学(号健庵),不久徐将此方传给门生楼村,楼村又传给自己的后人,至乾隆时代,其方已传给了楼姓王的外甥孟亭太守,故又称"王太守八宝豆腐"。
