Salbut (handheld tortillas)

This antojito (street food) is a freshly made corn tortilla. It contains lettuce, avocado, tomato, cucumber and turkey.

Cochinita pibil (slow-roasted pork) is buried pork. In fact the word pib means buried and formerly the cochinita (slow-roasted pork) was prepared in a hole. The meat is seasoned with achiote (annatto). After cooking it is served in tacos from freshly made tortillas.
