From "Saint George and the Dragon" by Raphael, an interesting detail I learned was that the girl being saved was said to be the daughter of a pagan King, and when Saint George brought the dragon back the girls town center, George cut off the head of the dragon for Christianity.  As well as, there were many variations of this specific event which implies to me that this was an important event either in Saint George's life, or in the christian faith as a whole.
