The erba - is the key to making fermented traditional zebda baladi (butter). The erba is made from a salted goat skin that is sewn together to create a container used to ferment and churn the milk.
Zebda Baladi - is the Egyptian butter used to make Ghee. Commonly women ferment the milk in a salted goat skin, before churning it. The fats separate so women can easily remove it to make butter, and the remaining butter milk is used as it is, to drink, or to make gameed - a sour tasting soft cheese used to make Kishk Saedi.
