Stacking lemon in a jar to make lemoon measfar.

Lemoon measfar owes it name to the safflower petals. In Arabic measfar is the name of the safflower red petals, that are sold in any local spice shop. The petals are used as a stuffing, along with nigella seeds and local lemons. The pickles are made during the lemon season, and eaten year round with many different dishes as an essential condiment.
