Oaxaca bombs
They are an innovative mixture of cheese and corn. They contain Oaxaca cheese, breaded with blue pulverized tortillas and accompanied by guacamole, chipotle chili, mayonnaise and a salsa roja (red sauce) made from grilled árbol (bird's beak) chili and tomato.
