The main function of this device is to continue breaking the tissues and homogenize the paste. The thermoforming machines are covered with a double wall where hot water circulates. The thickenings in the laterals correspond to that double wall; so that it never comes into contact hot water with olive paste. However, temperature of the blender, and therefore of the paste, should not exceed 40 degrees Celsius, thus avoiding to degrade the fatty acids in the oil.
