Cachopo is a traditional Asturian dish. It consists of two large fillets of beef, with some Serrano ham and cheese in the middle. The whole thing is eaten hot, after being coated with eggs, flour, and breadcrumbs, and fried. It is usually served garnished with potatoes, peppers, or mushrooms.
