Cantabrian baby eels have always featured in Casa Gerardo's kitchen. In times gone by, when baby eels weren't so scarce, the family would eat omelets made with any that were leftover. Inspired by this memory, Marcos uses them in his dish "Baby eels, eggs, and truffle."
