Cebreiro is a Galician cows’ milk cheese which is registered under the EU scheme for protected designation of origin. El Queso de O Cebreiro—to give it its full name—is a raw-milk white cheese which is soft and grainy, and made with cows’ milk. It is completely natural, with no preservatives or additives. It is produced in 3 towns in the east of Lugo and the milk used comes from healthy cattle from the Rubia Gallega, Braunvieh, and Holstein Friesian breeds, all of which are reared in this area. The cheese is made with whole pasteurized milk and rennet, either from animals or other authorized sources.
