Executive Chef Mongiello worked on nuclear submarines over a 21-year Navy career so came to love the intensity and power of roasted and dried ingredients. Dried are two times more intense than fresh. For the "Arkansas Chili" he invented at the Camp David Resort and Conference Center, Executive Chef to the President, Mongiello, often combines over-lapping dried and fresh ingredients. Originally featured in the best-seller, Everyday Cooking with Dr. Dean Ornish, the ingredients list has expanded since 1995 for making "Arkansas Chili." This is one of the more famous vegetarian recipes created by Executive Chef Marti Mongiello for Bill, Hillary, and Chelsea Clinton.
