Ingredients :rape flowers 45g
Seasoning :chicken stock 100ml, sea salt 1g, sugar 1g, shallot oil 10ml, saffron water 1ml
Finishing :3 minutes
Method :
1. Combine chicken stock with salt, sugar, shallot oil, and saffron water, heat to reduce.
2. Season rape flowers with salt to taste. 3. Fill deep plate with reduction and top with rape flowers.
