Rodrigo de la Calle was raised to the rhythm of his father's orchards, so when he settled in Aranjuez (Madrid) to open his first restaurant, the first thing he did was to acquire his own cultivation area. It would be the first germ of gastrobotany, a concept coined in 2000 that he developed with the biologist Santiago Orts - currently with farmer Héctor Molina - and with which he has researched new plant and fungal species and rescued ignored products. The tasting menu at "El Invernadero" restaurant, in Madrid, "is decided by the farmers."
